this week’s menu – Feb 24th

Another week, another homage to Rachael Ray. Looks like this month’s magazine was chock full of goodness. Have to give credit to my little chicklet Sonia who helped me craft this menu. No joke, the apple bacon roast chicken was completely her invention (inspired, of course, by last week’s apple bacon mac and cheese which was fabulous!). It’s a multicultural menu this week.

seafood paellaSunday – Seafood paella with shrimp and littleneck clams (probably only the second time in my life I’ve purchased clam juice for anything!)

Monday – Sonia’s special… Apple-bacon roast chicken.

She tells me the dish should include the following items (pepper was suggested but rejected…). Apparently we are supposed to eat lemony couscous with this!

    • Apples
    • Bacon
    • Chicken
    • Salt
    • Olive oil
    • Rosemary
    • Garlic

Tuesday – Taco Tuesdays return!!! With fresh guacamole and salsa.

Wednesday – Sauteed garlic shrimp; Angel hair pasta with shallot white wine cream sauce; Sauteed asparagus

Thursday – Rice, daal, chapathis, green bean bhaji

Friday – Mom and dad at the Village School auction (fundraiser for our daughter’s preschool)! Kids will just have fend for themselves, I guess!

Really, I suspect this is going to be worth the calories, and since I’ve never ever made bread pudding before, should be fun to try! I know this goes against my health and wellness spirit, but you have to live a little now and then, no?
