this week’s menu – Jan 27th

Kudos to my husband for starting the week off right with an outstanding roasted leg of lamb for tonight’s dinner (and thank you, Ina Garten!) coupled with roasted potatoes with red pearl onions and steamed asparagus. Wow.

We’re using the leftovers tomorrow!

Monday

Tuesday

  • Shrimp soft tacos
  • Tortilla chips with guacamole

Wednesday

  • Tofu stir-fry with veggies
  • White rice
  • Wonton pot-stickers

Thursday

  • Meatloaf meatballs
  • Sautéed green beans
  • Salad

Friday

  • I’m thinking we’ll be ordering out by Friday…
